Lava Cap Cabernet Sauvignon
The Sierra Foothills aren't Napa, but you can certainly produce Napa-quality wines there. In fact Joe Norman, the current head winemaker who came on in 2013, previously worked for Napa's famed Heitz Wine Cellars! Grown on volcanic and granitic soils in the El Dorado AVA., this wine is full-bodied and loaded with flavors of blackberry and black currant, along with baking spices and cedar. It offers structured tannins and a long finish of black cherry and vanilla. Lava Cap was aged for 20 months in both new and used French oak barrels. The winery is devoted to sustainable viticulture and elegant winemaking.
