“Vinum Regum, Rex Vinorum” – “Wine of Kings, King of Wines.” Those famous words are attributed to King Louis XIV of France, whose court popularized what is now known as one of the finest wines in the world. Made using botrytis, or “Noble Rot,” Tokaji is made the same way as Sauternes, though the use of high-acid Hungarian grapes makes this an even brighter style. For this wine, flavors of dried apricot and orange blossom lead into a long, fresh, and honeyed finish.
